The Mini Has a USB-C port. If I connect a converter such as “Ugreen USB-C to Ethernet Gigabit Adapter”
to the Mini, will it recognise my local wired ethernet network in place of Wi-Fi? My WI_FI is flakey to the Mini’s location.

The USB C port is for powering and for direct connection to a PC for playback only, I don’t believe that the circuitry allows for any connection for ethernet back to the Linkplay board, but you could always give it a try, you never know your luck!
I would try a wifi booster or extender to try to achieve a better signal.
