I have started a boombox project

I plan to use a 2ohm subfoofer + 2 x 3 ohm speakers

Is 3 ohm ok?

2 Ohm for subwoofer would be OK, but you need to take care about the input power of the adapter. The 3Ohm for stereo is not good, might cause protection when max volume, better use speakers greater than 4Ohm. And also need to care about the input power, it will reach max 200W for this config.
