I want to use the Up2Stream Amp Mono - Multiroom Wireless Streaming Mono Amplifier Board to drive a pair of 3 ohm speakers. Pretty low volume levels…will this be able to drive them?

I cannot see any issues there, into a 3 Ohm load you are able to get the full 50W the amplifier is able to deliver.
